The steam distillation of an aromatic plant creates two liquid phases that do not mix and remain superimposed. The phase that stays up is the volatile oil (since it has a density less than 1) and is composed of volatile and fat-soluble (i.e., fat-soluble) aromatic molecules.
The bottom one is the aromatic hydrolate, which has an aqueous part, a smaller part made up of aromatic molecules and another made up of non-aromatic components that are soluble in water. Then it has to be microfiltered and packaged to protect it from light and oxygen as it is so fragile that it quickly becomes contaminated with bacteria. For this reason, once opened, the hydrolates must be consumed within the following 6 months and kept at a constant temperature between 13 and 15 degrees. Although they have received less research attention, their therapeutic power is very interesting as they contain all the information of the plant.

The conditions hydrolat, flower water O aromatic water, introduce nuances that can lead to hydrolates not being 100% aromatic and that derive from the emulsification of an EO or from a dilution of the hydrolate itself. Their great advantage is their high level of tolerability and safety in use. Unlike EOs (which require expert advice), certified hydrolates can be used during pregnancy, lactation, newborns, or the elderly.
